Eating Too Much Meat?
Eating meat every day of the week? Try going “meatless” once or twice a week for a healthier lifestyle. Studies have shown that areas with the highest meat consumption have the highest rates of coronary heart disease and many types of cancer. Red meat in particular was found to be linked to an increased risk of colon cancer.
Going “meatless” is easy. Try replacing a meat meal with pasta and meatless sauce or a baked potato stuffed with broccoli or spinach. Have rice and beans or a vegetable lasagna. Soy is a great non-meat replacement so try tofu or other non-meat soybean dishes.
To help you on your way, here is a stuffed red pepper recipe we hope you enjoy.
Stuffed Red Peppers
(from the “It’s All About Nutrition” kitchen)
4 medium red peppers
1 cup brown rice
1 small can of corn
1 small can of peas
1 small diced onion
Diced broccoli
Grated cheese
Cut tops of peppers; remove seeds. Stand peppers upright in a baking dish. Cook rice following directions.
Blend rice with rest of ingredients and lightly season with your favorite herbs and spices (we use an Italian herb blend).
Stuff peppers with rice-vegetable filling. Sprinkle tops with grated cheese. Bake uncovered at 350 for 25-30 minutes or until hot.
Sweet peppers provide vitamins A and C, potassium, and fiber.
